Piña colada – My favorite cocktail!

Piña colada is a sweet and tropical cocktail made with white rum, pineapple juice, cream of coconut and ice.

It can be served either blended or shaken with ice and garnished with a pineapple wedge and a cherry.

The piña colada has been the official drink of Puerto Rico since 1978 and is also my official drink for a long time. I really ♥ this creamy and tropical cocktail with the taste of rum.

 

Matema Beach

We have been in Matema on the last day of 2015.

Matema is a small village in Tanzania next to Lake Malawi! A nice village with few shops and a lot of beautiful people.

We could get fresh fish, meat, vegetable, fruits and beer, but sparkling wine was not available.

We are used to enjoy New Year with a glass of sparkling wine, so I had to make a new plan, it should be good, something special at this gorgeous place.

Especially on travel you have to be flexible. That means, flexible not only with the New Year’s drink.

For example, you make a decision and for some reason, it is not possible.
At the beginning of our journey, I had to learn to accept it and to make plan B or later plan C or … but believe me, life is full of possibilities and opportunities, there is always a way!

Things to consider before we go shopping:
– What do we like?
– What is available?
– Can we afford it?
– How is the quality?
– Is it seasonal?

We went to the market in Matema. Luckily, we got all ingredients for our piña colada very quickly.
A fresh tangy pineapple with a fruity smell, canned pineapple juice and a reasonable cream of coconut at a tiny stall. Rum we had still from Malawi.

 

Piña Colada

I decided to make the piña colada blended (frozen style) with my hand blender. First, I had to cut the pineapple.

I added 6 chunks of pineapple,

2 oz (about 60ml) pineapple juice,

2 oz white rum and

2 oz cream of coconut in the blending cup.

Then I had to crush ice in a plastic bag with a hammer. (A strong blender crushes the ice.)

I mixed about 5 oz (150 ml) of crushed ice
to the other ingredients and blended until it got a smooth consistency.

Strained into chilled glasses and garnished with a fresh pineapple wedge.

Voilà! 

Our delicious piña colada was ready, ready to enjoy and it was so tasty,

that I had to make a second one immediately.

  • 2 ounces/about 60 ml white rum
  • 2 ounces cream of coconut
  • 2 ounces pineapple juice and 6 chunks of pineapple (blended version) or 6 ounces pineapple juice (shaken, on-the-rocks version)
  • Ice (enough to fill the serving glass).
Instructions / Zubereitung
You can make your Piña Colada either blended or shaken with ice
Blended version (frozen style)
  1. Add rum, cream of coconut, pineapple juice, chunks of pineapple and ice in a blender.
  2. Blend all the ingredients until smooth and pour into chilled Poco Grande glass (12-ounce).
  3. Add your garnish and serve with a straw.
Shaken (on-the-rocks version)
  1. Add rum, cream of coconut and pineapple juice to a shaker and fill with ice.
  2. Shake and strain into a chilled glass filled with fresh ice.
  3. Add your garnish and serve with a straw.
Notes / Bemerkungen
Garnish:
Pineapple wedge, a maraschino cherry, leaf from a pineapple, cocktail umbrella

Variations:
• Cream of coconut: Instead of 2 ounces cream of coconut you can add 1 ounces cream of coconut and 1 ounces of heavy cream.
• Pineapple juice: fresh, canned or mix pineapple chunks with canned pineapple juice
• You can also freeze pineapple chunks and then use them in place of the pineapple juice and ice and blend with rum and cream of coconut until a smooth consistency.
